Used by some of the best bakers in the country, Trailblazer is a T85 high protein bread flour made from the Yecora Rojo varietal. With a clean, wheaty flavor, it’s perfect in hearth loaves, pan loaves, and pizzas.
Trailblazer has a creamy crumb well suited to naturally fermented doughs. It has more bran and germ than most bread flours, so use a tad more water than your recipe suggests.
