Our fruitcake is the best ever! While I didn't grow up eating fruitcake at the holidays, I've come to take it upon myself to learn about this holiday treat. A mixture of apricots, dates, figs, cranberries and walnuts soaked in brandy are gently folded into a delicious spicy batter. We bake it long and slow so that it caramelizes as it cooks then liberally brush it with brandy after it comes out of the oven. The result is a chewy, boozy, fruit filled cake that will leave Santa and his reindeer chuckling as they fly out of town on Christmas eve.
