Italian Pignoli Cookies

If there's one cookie I personally look forward to every holiday season at Breadfarm, its the Italian Pignoli Cookie.  Soft, chewy and studded with organic Pinenuts, this cookie is rich, indulgent and delicious.  Made with organic egg whites, powdered sugar, almond paste and a touch of coarse salt then rolled in pinenuts and baked just to golden brown.
