     A day in the life of Breadfarm

 

 

SKORDALIA SAUCE
I am always trying to find ways to incorporate old bread into recipe preparations.  I tasted this dish first at Lola, a Tom Douglas restaurant in Seattle.  They serve it with other spreads and fresh warm pita's.  It is a great accompaniment to summer veggie platters.

1 small potato
5 slices stale white bread, crusts removed
3 T lemon juice
3 T white wine vinegar
3 T olive oil
1/2 teas sugar
1/2 cups almonds, chopped
2 cloves garlic, chopped
Salt & Pepper, to taste

Boil potato until soft and peel.  Soak bread in water for 10 minutes.  Squeeze out excess water and set in bowl.  In a small bowl, combine lemon juice, vinegar, olive oil, sugar and salt & pepper, set aside.  Put almonds, garlic and potato in a food processor and pulse until smooth.  Add soaked bread, alternating with lemon juice mixture to food processor.  Mix until combined.  Serve as an appetizer with crostini.
