RADISH BUTTER
With fresh herbs on Breadfarm Baguette
Serves 8-10 as appetizer

This recipe is a result of too many radishes in the garden.  I get tired of radishes in salad night after night.  One of our bakers had a British mother who made her radish sandwiches.  Buttered bread, with thin slices of radishes sprinkled with salt.  I combined the same ingredients to make a versatile spread. 

2 cups chopped Radishes
1 cup softened Butter
1 T fresh mint, chopped
1 T chives, chopped
1 T parsley (flat or curly)
1 T lemon zest, optional
Salt & Pepper, to taste

1 loaf Breadfarm Bow Hill Baguette or Black Olive Baguette

Wash, but do not peel the radishes.  Chop radishes finely.  Using a kitchen mixer, whip the butter until light and airy with paddle attachment.  Add fresh herbs (and zest, if using), mixing well to incorporate.  Gently fold in radishes.  Add salt & pepper to taste.  Serve immediately on crusty bread or refrigerate until needed.
