     A day in the life of Breadfarm

 

 

PUMPKIN BREAD PUDDING
Serves 8
1 loaf Breadfarm Challah-cubed
6T brown sugar
1 cup raisins
1/3 cup bourbon
1 cup pureed pie pumpkin
4 eggs
1 cup sugar
1 1/2 cups milk
2 teas vanilla
1/4 teas allspice
1 teas ginger
1/2 teas salt

Preheat oven to 350 degrees.  Butter 8 ramekins, sprinkling interior with brown sugar.  Place raisins in a bowl and cover with bourbon.  Whisk together pumpkin, eggs, sugar, milk, vanilla, spices and salt.  Toss in bread cubes, mixing lightly to combine.  Fold in raisins/bourbon.  Bake 40 minutes or until set in a water bath.
